Abstract
Objective: The aim of this study was to confirm preventive affect of fluoride on the inhibition of glucose fermentation.

Methods: Saliva sample collected after intake of sugar from 36 volunteers. The saliva samples were stored in frozen after filtration. Sample was analyzed by ion chromatography using.

Results: When stored in room temperature, 95% of glucose was preserved in fluoride-mixed saliva, while only 65% of glucose was preserved without fluoride. Fluoride was not detected in the over half of subjects. The average fluoride concentration before sugar intake was higher than that after sugar intake. It is found that the fluoride concentration and lactic acid concentration before sugar intake showed negative correlation. The relationship between the fluoride concentration and produced lactic acid concentration after sugar intake was also investigated to negative correlation.

Conclusion: Fluoride inhibits carbohydrate metabolism and formation of lactic acid, and finally prevents dental caries.
